Turkey day is not a holiday here, so to find the usual ingredients can be tricky. Turkey is all over the place, but I have not seen it offered by the bird, besides that would have been way too much for us. Also cranberries are not known in this part of the world. Though I remember having seen them many years ago back in germany in the freezer section.
So, I came up with the following recipe which turned out fairly nice and creates a bit of the holiday spirit.
Take some turkey filets and smear them with lingonberry jam (available at IKEA) and cover with a slice of cooked ham … this should cover the main holiday flavours. If you find a way to ad some cornbread or stuffing … let me know.
Then roll the thing tight … you will be surprised to see how much of the jam is trying to squeeze out … fight it, and secure it with toothpicks.
If you have the time, let it marinate a bit. But once you are too hungry and too curious, fry those little buggers. Be careful, the leaking jam creates a nice caramel crust which can get black quickly.
